Highly recommended by Cooks Illustrated. The Matfer
received raves for its comfortable handle, long blade, and exceptional
performance. Because of its smooth, slippery plastic and Fiberglas
composition (exoglass), the spatula nimbly flipped fish without scarring
the delicate flesh (as the metal spatulas did), and it is completely safe
for nonstick skillets.
Once relegated to restaurant kitchens, fish spatulas
are now popular among home cooks as well. The long, narrow, ultra-thin
triangular blade is especially designed for sliding under long, narrow,
ultra-thin fish fillets. To find out if we really needed one more spatula
in the kitchen, we pitted one of our recommended all-around spatulas, the
Cuisinart, against a plastic nonstick fish spatula that had performed well
in another round of tests, the 12-inch Matfer Slotted Pelton. The Matfer
fish spatula sports an ultra-thin blade (just 0.68 mm thick) that did
slide under delicate sole fillets more easily than the Cuisinart. But the
difference was less dramatic than we expected (the regular plastic spatula
worked just fine). What's more, the very small blade of the fish spatula
makes it unsuitable for other tasks, such as flipping pancakes and fried
eggs. Our conclusion: A good regular plastic spatula is fine for all your
flipping needs, even fish.

Molded from polyamid plastic and fiberglass, this
utensil from France is sturdy enough to support even burgers and fish
steaks and has a heat resistance of up to 430 degrees Fahrenheit. The
fiberglass gives the spatula its stiffness and strength, and because
it’s nonmetallic, it will not scratch nonstick pots and pans. The
comfortable handle is set at an angle to the flat blade, which is tapered
to a thin edge that will easily slide under food. The overall size of this
tool is generous--12" long, with a turning surface 3 1/2" wide
that fits well in a standard skillet.
