Blue, Black Steel & Carbon Cookware In cookware, carbon steel is an excellent heat conductor. It is suitable with all heat sources, including induction. It is a high density metal and therefore doesn’t retain odors. It non-coated and if protected from rusting, it will last a lifetime. It withstands high temperatures and allows for longer preheating. A steel pan may come with different finishes. One is a silver finish achieved through additional polishing in the manufacturing process. It is then commonly called “carbon steel”. It may also come with a blue or black finish, which comes from a final heat treatment in the manufacturing process. A steel pan not only comes with different coloring finishes, but also changes colors under heat and over time (the bluish dots of the welded handles come from this extra heat) Much lighter than cast-iron, a steel pan lasts forever. After being seasoned, it acquires natural non-stick properties that won’t chip, scratch or peel off. Unlike non-stick pans, it is safe to use at high temperatures, as well as with metal objects, such as knives, forks or spatulas. It is compatible with all heat sources, including induction, and is oven proof. A steel pan is also inexpensive . It requires minimum care, but is not dishwasher or microwave safe. Be cautious as the handle gets hot. Each pan comes with a limited lifetime warranty.

Carbon steel pans are made of high grade carbon steel. Steel cookware achieves and maintains both very low and very high temperatures, making these pans a highly effective and versatile cooking piece.

The pan is pre-seasoned with a coating of food-safe vegetable oil to prevent rusting in storage and shipping and is then placed in a plastic bag. As the bag will stick to the oil, be aware that it will leave temporary marks and spots which will be removed when the pan is washed and seasoned.

Prior to the first usage or after an intensive cleaning, a steel pan must be seasoned/re-seasoned. Seasoning a pan is simple. Using a paper towel, simply wipe the interior of the pan with any type of flavorless cooking oil and heat the pan while empty. This first step alone will even out the existing oily spots on the pan. When the surface becomes hot (i.e. when the oil begins to liquefy), turn the heat off. Wait for the pan to cool off and with a new piece of paper towel wipe off any excess oil. At that stage, the pan starts to darken and loses its marks and spots. Repeat this process one or two more times. You will notice the color has changed to a darker finish. Be aware that the pan is not dirty, but rather the heat has changed it original color. In the process, the pan has gained a natural non-stick protection. Please use caution as the handle gets hot.

To ensure that the pan keeps its properties and in order to avoid oxidation, wash it in hot tap water immediately after usage, and then wipe it immediately with a paper towel. It may then be thinly oiled if you wish and stored in a dry place.

TIP: Professional chefs dry their steel pans by putting them in the oven for a few minutes. Carbon and/or blue steel pans are not dishwasher safe nor microwave compatible.

Black Steel Frying Pan

This "lyonnaise" profile pan has a high flared and curved skirt. This very distinctive shape, with no sharp angles, enables the food to slide easily from the frying pan onto a plate or dish.

The strip steel handle is firmly riveted.
The angled sides keep in steam and discourage dry frying.
This particular style has a 3/64" (1.2mm) to 5/16" (1.5mm) thickness.
