Sujihiki / Yanagiba Knives

 

The Sujihiki is a western style slicer with a western style handle, bolster and double bevel grind designed to slice sushi rolls and Hako Sushi.

A Yanagiba is a traditional knife with a traditional handle and single bevel grind. Yanagiba knives are also known as sushi knives and are used to slice boneless fish fillets into sashim and topping for sushi. The graceful, thin blade cuts beautiful slices in one long, drawing stroke. Single grind, long narrow blade.
